I've found the holy broth! Place was empty on memorial weekend - surprisingly! The combo beef rib pho had the most beautiful CLEAR broth color, with natural beef fat oil on the top and a beautiful aroma. You know when you see the fat on top it's like mom's homemade pho that's been simmering and collecting all the natural beef flavors straight from the bones for an entire day! It was PHENOMENAL pho! The beef was so tender and had a natural fatty buttery flavor. Garnishments on point. When a pho place offers sawleaf I know they pay attention to detail! That's one of ways I do my forensics on pho pictures on Yelp. Check out the broth in my pics. Use that as a benchmark when reviewing pho restaurants on Yelp. You won't go wrong. Taste the broth first and you'll confirm that it needs NO additives such as hoisin. Use a tiny bit of lime in the broth (not too much as it neutralizes the beef broth) and you're good to go. Use sriracha and hoisen in a small dish to dip your meat and you can also squeeze some lime in there and add their chili oil. It was heaven! We had to split that one bowl for two professional eaters and had a hard time finishing it. Total food coma! Look for: Color and clarity. In person will include noticing the aroma.

Food- 6/5 stars. The price of the pho may be $17 but every single cent is worth it. The amazing Wagyu beef quality makes a bone broth that is both rich and refreshing. The meat that comes with the amazing pho broth is basically a Wagyu steak cut in cubes, and really quality meat i wouldn't be surprised if it would cost $50 a plate at a steak restaurant. The fried rice with steak is also excellent ( only downside is you don't get as much quantity of meat) but it is the same quality of marbled soft delicious steak. Fried rice with shrimp is also soft, perfectly cooked- not overdone, not raw. It is very difficult to get this perfect texture. Service - Boss is a great guy. He had an unfortunate closure of other restaurant, but this one is excellent. Wish the squid/calamari could be put back on menu Ambiance- the Hi Chew refresher is nice exit gift. Nice umbrellas from the ceiling, quite excellent sauces on the table. Very spicy

Everything was delicious. The chef even came out to chat with us. Probably because we definitely stood out as the only Not Vietnamese people in the place. The fried rice with filet mignon was spectacular. The octopus salad on top of the shrimp crackers was so delicious, crispy and exotic, the clams in the broth - yummy. Not so much a fan of fried food but if thats your jam its very different from American fried. Overall 5 stars for service, flavor and hospitality! Ps They Are open but the entrance is to the Left of the sign.
